Ganja Meat Ball




1 lb. hamburger

1/4 cup chopped onions

1 can cream of mushroom soup

1/4 cup bread crumbs

3 tablespoons Ganja

3 tablespoons India relish


Mix it up and shape into meatballs. Brown in frying pan and drain. Place in a casserole with soup and 1/2 cup water, cover and cook over low heat for about 30 minutes. Feeds about four people.

A Monkey, to reform the times,

Lamb with Blackberry Sauce



1 ½ teaspoon of chopped shallots

1 clove garlic

1 teaspoon of olive oil

2 cups of blackberry pulp

2 teaspoons of honey

1 whole clove

1 teaspoon of cardamom

1 jalapeño pepper, seeded and diced

1 ½ cups of Port wine

4 lamb chops

Sauté the chopped shallots and garlic in hot olive oil until translucent. Mix the blackberry pulp, honey, clove, cardamom, and jalapeño; then add the port. Reduce to half, then add the add remaining ingredients. Grill the lamb chops for about 4 minutes each side for medium. Serve with sauce.

Beef Empanadas With Cranberries






Filling:
1/2 (6 inch) corn tortilla, coarsely chopped
1/4 pound ground beef
1/4 cup chopped onion
1 small garlic clove, minced
1/2 to 1 serrano chile, finely chopped, seeds and veins removed for less heat if desired
1 teaspoon ground cumin
1/2 cup Ocean Spray® Craisins® Original Dried Cranberries
1/3 cup beef broth
salt and pepper
3 tablespoons chopped cilantro

Dough:
3 (9-inch) refrigerated pie crusts
1 egg, beaten

Pulse tortilla in food processor until finely ground or finely mince by hand (this will help thicken the beef mixture). Heat small skillet over medium-high heat until hot. Add ground beef and cook 3 to 5 minutes or until brown; remove any excess drippings. Add onion and cook 2 minutes. Add garlic, serrano and cumin and cook 30 seconds. Add Craisins and beef broth and bring to a boil. Cook 1 minute at medium-low heat. Add tortilla, season with salt and pepper and cook until thickened, increasing heat if necessary. Stir in cilantro.

Heat oven to 400°F. Line 2 baking sheets with parchment paper or grease. Place 1 pie crust dough on surface and cut into10 rounds using 3-inch cookie cutter. Remove and discard dough scraps. Fill each round with 1 ½ teaspoons filling. Fold dough over to form half moons, press cut edges together with fork to seal. Place on baking sheet and brush with egg. Repeat with remaining pie crust dough. Bake 15 to 20 minutes or until golden brown. Serve warm. Makes 30 appetizers

Pan de Muertos

1/4 cup milk
1/4 cup butter, cut into 8 pieces

1/4 cup sugar

1/2 teaspoon salt

1 package active dry yeast

1/4 cup very warm water

2 eggs
3 cups flour, unsifted

Bring milk to a boil. Remove from heat, then stir in butter, sugar and salt. In a large bowl, mix yeast with warm water until yeast is dissolved. Let stand 5 minutes, then add the milk mixture. Separate the yolk and white of one egg. Add the yolk to the yeast mixture, saving the white for later. Add the other egg, too. Now add the flour to the yeast and egg mixture, blending well until a ball of dough is formed. Flour a work surface very well and place dough in center. Knead until smooth. Return to the large bowl, cover with a clean dish towel, and let dough rise in a warm place for 90 minutes. Grease a baking sheet. Preheat oven to 350 degrees F. Turn dough out onto floured surface again and knead once more. Then divide the dough into fourths. Set one fourth aside. Roll the remaining three pieces into ropes, all of about the same length. They should be fairly hefty--not dainty ropes. Pinch three rope ends together and braid. Finish by pinching ends together on opposite side. You should have one long braided loaf. Next, divide the remaining dough in half and shape each half into a bone. Cross the "bones" in an "X" shape and lay them atop the braided loaf. Cover bread with the dish towel again and let it rise for 30 minutes more.

Meanwhile, in a large bowl, mix the following:

3 teaspoons sugar
3/4 teaspoon anise seeds
1/2 teaspoon ground cinnamon


In another bowl, beat egg white slightly. When the bread has finished its 30 minutes of rising, brush top with egg white and sprinkle with the sugar mixture, being careful not to get any on the crossed bones. Bake for 35 minutes, or until done, at 350 degrees.
