Cherry Tarts








  • 3/4 c. sugar
  • 2 tsp. cornstarch
  • 1/2 tsp. salt
  • 3 tbsp. orange juice
  • 1 tbsp. lemon juice
  • 1 c. unsweetened cherry juice 2 tbsp. butter
  • 1 tsp. grated orange rind
  • 4 c. red tart unsweetened cherries
  • 9 tart shells

Mix sugar, cornstarch, salt, and fruit juices. Cook over direct heat for 5 minutes or until thickened and clear. Remove from heat; add butter, orange rind, and cherries. Cool. Put into tart shells. Serve plain or with ice cream or whipped cream.
